Chicken is great with a full flavoured white wine. Oak aged wines such as Fine Fleur  or Avarus from the South can be great, Patrimoine from the Loire has more acidity and will cut through rich stuffing.  If you don't like oaky wines try Domaine Salmon Vielle Vignes. Light reds can also be good. A favourite of mine is the minerally Chenin Blanc from Domaine de La Chaise.
